Vinification of the Bellavista La Scala Vendemmia Brut Franciacorta

Here, the vines dig their roots deep into limestone and gravel soils. Once perfect physiological ripeness has been ensured, the grapes for La Scala Vendemmia Brut Franciacorta are harvested exclusively by hand without the aid of coarse and less selective machines. After the manual harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. The base wines are then fermented. Once the final spumante has been blended, the wine is aged using the classic bottle fermentation method. This is followed by bottle ageing for 48 months.
